Here to stay in the Old Town
What began as an August pop-up quietly captured Edinburgh’s heart, drawing locals, students and visitors along with a perfect 5.0 rating on Google. Now it is here to stay: from Monday 12 October the Jeffrey Street restaurant closes for a full refurbishment, reopening in mid-November as a permanent Vietnamese restaurant across two floors. Until then, the pop-up is trading right up to Sunday 11 October.
Founded by Bau Pham, whose original Pho & Roll sits beside the Water of Leith in Stockbridge, Jeffrey Street stays firmly in the family, headed up by his brother Thinh. The refurbishment will transform the site into a calm, lantern-lit retreat with more than 120 covers: a main dining room with timber panelling, a striking green feature wall and a curved, fully-licensed bar, and an intimate flame-charred basement below. Fully licensed, it will pour freshly-tapped Pilot beer alongside house cocktails and wine, the ideal partners to Pho & Roll’s fresh, punchy cooking.
“We only meant to pop up for the festival, but the response has been overwhelming. Making Jeffrey Street permanent felt like the only thing to do, and we can’t wait to welcome everyone back into a space that finally does the food justice.”

“The broth for the Pho Love is incredible. The tofu pancake was delicious, as was the banana sticky rice dessert. The service is great and the decor is lovely. I got here early on a Tuesday evening and it filled up as I ate. I’m really glad I stumbled across this place, I’ll definitely be back.”
“Agree with all other 5 star reviews. Lovely staff. Clean tasting food and fab refreshing home made drinks. Especially bamboo Kimchi which I tried for first time and love it. Well done keep this up and you’ll be number 1 soon enough.”
